Burger Patty Ingredients
- 1 lb. ground beef (or 4 Beef Burger patties)
- 1/2 pound chorizo
- 1/2 cup crumbled queso fresco or cotija + more for serving
- 1/4 cup fresh chopped cilantro
- 1 Tbsp cumin
- 2 tsp diced chiles in adobo
- 1 tsp garlic powder
- 1 egg
- Kosher salt
- fresh cracked pepper
- olive oil (for browning buns and cooking burgers)
Creamy Avocado Sauce Ingredients
- 2 avocados, pitted and diced
- ¼ cup sour cream
- ¼ cup fresh cilantro leaves
- juice of 2-3 limes
- Kosher salt, to taste
- splash of water
- ½ cup sour cream
- 3 Tbsp lime juice
- zest of 1 lime
- 2 Tbsp mayonnaise
- 2 Tbsp fresh chopped cilantro
- 2 tsp diced chiles in adobo
- 2 tsp honey
- Kosher salt
- fresh cracked black pepper
- 12 oz. package of broccoli slaw
- 4-6 brioche buns
- Pico de Gallo (optional)
Instructions
For the Burger Patties
- Add beef, chorizo, queso fresco, cilantro, cumin, chiles in adobo, garlic powder, egg and a large pinch of salt and pepper.
- Use your hands to combine everything together, but be careful not to over mix.
- Gently form 4-6 burgers patties from the burger mixture and set them aside.
- Heat about a tablespoon oil large saute pan over medium heat.
- Toast buns in batches, placing the cut side down in the oil.
- Cook for 1-2 minutes or until the cut side of the bun is crisp and slightly
- golden brown. Set aside.
- Heat 1-2 tablespoons oil a large saute pan over medium-high heat (or heat a grill over medium-high heat and oil grates).
- Cook burgers for about 3-4 per side or until they form a dark brown crust on each side.
For the Avocado Sauce
- Add all sauce ingredients to a food processor until it forms a smooth, creamy consistency.
For the Chipotle Slaw
- In a medium bowl, mix together all of the ingredients except for the broccoli slaw until combined.
- Add broccoli slaw and stir to combine until everything is well coated in the dressing. Enjoy!
