Ingredients:
- 1 Tbsp Extra Virgin Olive Oil
- ½ Yellow Onion, diced
- 2 lb Ground Beef
- 2 Tbsp Salt
- Fresh Ground Black Pepper
- 2 Tbsp Keto Taco Seasoning Mix
- 1 Jalapeno, seeded and minced + extra for garnish
- 6 Eggs, beaten
- 2 cups shredded Mexican Cheese
- 2 Tbsp fresh chopped Parsley
- 1 cup Sour Cream (optional)
Instructions:
- Preheat oven to 350℉.
- In a large skillet, heat oil over medium heat. Add onion and cook for about 2 minutes until slightly softened.
- Add ground beef to skillet and season with salt and pepper. Break up meat and cook until no longer pink, about 6 minutes. Add in taco seasoning and jalapeno. Cook until spices are lightly toasted. Drain and let cool.
- In a large bowl, whisk eggs and then add in meat mixture.
- In a 2-quart baking dish, spread the mixture into an even layer and sprinkle with cheese.
- Bake until set, or about 25 minutes
- Garnish with parsley and enjoy with sour cream and/or jalapeno. Serve!
